Healthy Baby Smash Cake Recipe

I've been planning Sylvie's birthday party for a few months and I knew I wanted to try to make her smash cake. We do not follow absolutely zero sugar/zero salt, but I do limit it for what we make and give to her. I'll plan to do a round up of simple, healthy foods I've found that make meal prep for her super easy especially during the week. Now, back to cake!
I searched the internet for a recipe that would incorporate items she already likes the flavor - she loves bananas so I knew that could be how I sweetened it. I found this recipe and made a few adjustments to it based on ingredients I had on hand. It turned out perfect and she LOVED it. She ate about 1/3 of the cake (I had cut it so it was about the size of a giant cupcake).

Healthy Smash Cake Recipe
1.5 cups all purpose flour
2 eggs
1 tsp baking powder
2 mashed overripe bananas
2 tbsp of applesauce
Preheat oven to 350 F. Spray cake pan with nonstick spray. In a mixer, beat 2 eggs and add overripe banana pieces and applesauce to blend. Add loosely packed flour slowly to incorporate and baking powder. Pour into pan and bake 20-30 minutes, or until toothpick comes out clean in middle. (Mine took about 26 minutes)
Once cooled, pop it out of the pan and cut the top to make it flat. Next, cut the circle in half to make two half circle shapes. Then, stack on top of one another and carefully cut both layers into a round shape.
Tip: cut the "extra" pieces into chunks and place in freezer (they'll make tasty breakfast "muffins" for later)!
For the icing, I mixed Whole Milk Green Yogurt (I used Chobani because of the consistency) and added a few defrosted mashed strawberries to give it a slight pink color. I put the take together the night before the party but placed in the fridge.

Needless to say, it was a hit and she loved it! It was super simple to make for an added win!
