Every Sunday, I will enjoy my breakfast and coffee while planning out meals for the week. I love cooking and I would estimate 85-90% of all of our meals are created at home. I started cooking a lot more during the pandemic as well as started trying more complex recipes for our "fancy date nights" at home. Now that we have a daugther, I find I reach for more quick and easy recipes to make that can either be prepared ahead of time or make leftovers. On Sundays, I will pre-chop all the vegetables and prepare sauces for recipes to make the assembly much easier. Here are a few of my favorite websites to visit for recipes and also, find some inspiration.

  1. The Defined Dish

I first discovered Alex when I was doing Whole30 - her recipes kept popping up online and I finally purchased her first cookbook. Fast forward several years and this is hands down my go to for our weekly meals. I have all three of her cookbooks now and some of our favorites include her chicken parmesan, epic meatballs, okra fries and dipping sauce, Nashville un-fried hot chicken, skillet lasagna, baja tacos....the list is never ending. I appreciate that she has so many recipes free on her website as well. Once you stock your fridge and pantry with some essentials (sesame oil, coconut aminos, arrowroot and tapioca starch, etc), the recipes are super simple to put together.

  2. Paleomg

I've followed Juli for awhile now, and over the years she has shifted away from the "paleo" only mindset but still creates simple recipes with real ingredients. Some of my favorites are her mojo pork bowls (we make this ALL the time) and banana date bread (I was eating this right before I had our daughter).

  3. Love & Lemons

One of my plant based college friends introduced me to this cookbook when I was visiting her Not only is the cookbook is gorgeous, but I love how it is organized by the types of ingredient, so if you have a handful of carrots you need to use there are a few recipes to do so. I really like a lot of the salads and sides from this cookbook, and I swear by her recipe and steps for making homemade pasta (available free on her website). We often just add a protein of our choice when using her recipes.

  4. Bon Appetit

This website is a variety of recipes, articles and tips to not only find some great meal inspiration but also other helpful tips. My FAVORITE meal from here is the open face steak sandwich with parmesan dressing. This is more so where I go when I feel in a rut and need inspiration outside of our normal meal rotations!

  5. NYT Cooking

Creamy Spicy Tomato Beans and Greens

Similar to Bon Appetit, when I'm looking for a more "elevated" type of meal, I'll go here for inspiration. I recently tried the viral creamy tomato bean recipe and it was truly restaurant quality. I also appreciate that similar to Bon Appetit, users will leave comments, suggestions and helpful hints to review.
